Lemon Noodle Salad

lemon noodle saladI just wanted to share with you my current favourite salad – the Lemon Noodle Salad. I could eat this at least four days in the week, as it’s just so light and tasty and really hits the spot. The best part is that it’s super easy (I don’t cook any other way) and is really adaptable to whatever you have in your fridge.

But this week was truly stellar, so here is one of the recipes today and the rest will follow in the weeks to come.

Lemon Baked Salmon

lemon baked salmonOne of my favourite and easiest things to make for dinner is Lemon Baked Salmon. I’ve yet to find any other flavour with salmon that I like as much – maybe you can let me know how you cook it, so I can expand my repertoire!

Let’s take a little diversion from sweet treat recipes this week because yes, while I find them fun to make and let’s face it – eat as well – the other 95% of the time I’m eating protein, fruit and healthy fats to keep everything ticking along in vibrant, healthy bliss.
