So while my last blog post was about how raw cacao is not that great for you after all (read it here) – here’s a Chocolate Brownie recipe using cacao!
What??
It’s ok, I haven’t gone mad, it’s just that I wanted to clarify that you don’t necessarily have to give it up altogether.
The only people who should be concerned are those who are taking it like a supplement – in their smoothies or a hot chocolate every day (like I was) and eating more of it than they should because they thought it was healthy.
I was having about a tablespoon a day and that was too much.
There is a big difference though, between having a heaped tablespoon of it every day, or putting a tablespoon in your batch of brownies or Homemade Chocolate and eating a little bit a day over a week and a half.
(I’ve never been one to put a ¼ cup or a ½ cup of cocoa in my cooking, as I found it all too strong anyway – so I’m all clear there.)
So, I’ve whipped up a batch of Sweet Potato Chocolate Brownies!
Unfortunately, the picture doesn’t do it justice, as they are delicious! Let’s get cooking…
Chocolate Brownies with Sweet Potato
(makes approx 10 pieces)
1 cup of baked sweet potato**
1 cup of macadamia nuts
1 TBS of honey
2 TBS cocoa powder
1 TBS vanilla extract
1 TBS 40UP – Collagen Protein Powder*
pinch Himalayan rock salt
Whiz all in a food processor, macadamia nuts first. Spoon into a baking paper lined tin.
Bake for 20 mins at 220C (428F.)
Enjoy! (As a sometimes food!)
Notes:
** Bake sweet potato until knife goes through the middle. (The length of time to cook depends on the size of it and if you cut it up, but for me it’s about an hour on 220C. I don’t peel the sweet potato beforehand. I just shove it all in, as it’s much easier to remove the skin once cooked and cooled. If you can remember to do it, it’s easier to bake and cool the night before. Just a note, don’t steam or boil it as too much moisture gets in the potato, and it ruins the recipe.)

This brownie is sweet and delicious as it is, however, it really does go to next level if you add icing/frosting. So here are some of my recipes: –
