Just thought I would keep away from chocolate this time around and play with some cute shapes in this high protein snack recipe – Collagen Gummies in lemon and coconut flavour!

Interestingly some body builders and natural therapists are steering away from protein powders and heading more towards the healing benefits of Collagen/gelatin. It is highly anti-inflammatory and balances amino acids when eating too much muscle meat like chicken breast and steak.

I was playing around with my macros on Cronometer to see how I was balancing my protein, carbs and fats and noticed that I was a little high in fats. While the right fats are great for us, it doesn’t mean you can have unlimited amounts. So I just needed to balance it a bit and up the protein. And these delicious Collagen Gummies do the trick.

So on the recipe..

 

Collagen Gummies – Lemon & Coconut

Lemon part

Juice of 2 lemons (approx 1/4 cup)

2 TBS raw honey

3 TBS grass fed gelatin CollagenX

Coconut part

Juice of 1 lemon

1 TBS raw honey

4 TBS coconut cream

2 TBS grass fed gelatin CollagenX

(totally optional – 2 TBS Gelatin Hydrolysate – just to get extra Collagen gelatin in there. One in each batch. It doesn’t gel or affect the recipe in any way.)

Start with the lemon part and put the lemon and rice malt syrup in a pot over low heat, mix together then slowly sprinkle each TBS of gelatin over the top and thoroughly mix in after each spoonful.

Keep mixing until the mixture is thoroughly melted through. Pour into silicon moulds only filling each halfway. Pop in the freezer to set quickly.

In the same pot, do the same thing over again with the coconut mixture and fill the silicon moulds the rest of the way.

Chill in the fridge.

These are tangy and creamy all at the same time, filling that sweet and protein gap without adding too many more fats to the mix. They don’t melt out of the fridge either, so they are great to pop in the school lunch box or take to work.
