One of my favourite things about simple recipes is that you can sometimes just add one more ingredient to the mix and it completely changes it to a new taste sensation. And this is what happened here for these Peanut Butter Chocolate Cheesecake Bites.

I had Philly cheese in the house for some reason and was making my PB Protein Balls and my usual weekly batch of Homemade Chocolate and decided to mix it in and the result was a decadent ‘to-die-for’ dessert that’s super healthy!

Oatmeal – healthy or not?

Aaaahhhhh! Oats and oatmeal are coming at me from everywhere – instagram recipe images, friends, daily health snippets and they are touting them as the healthiest breakfast to eat EVER.

From the nutrition facts I can see a bit of Iron and a bit of magnesium, some protein and fibre and a whopping lot of carbs. Apparently they help reduce cholesterol in the arteries, something to do with the fibre.

More claims are that they digest slowly, making you feel more full for longer.

Then why is my experience with oats completely the opposite? Tell me that?

Homemade Peppermint Patties

Peppermint and chocolate is a fantastic combination. These Homemade Peppermint Patties are the only dish with peppermint that doesn’t taste like toothpaste to me.

I put together this recipe last year but have made a slight change, as I didn’t like the way the coconutty part was a bit crumbly. Macadamia nuts to the rescue as their oil content helps the ‘stick it’ factor and mild taste takes on the flavour of whatever you put with it.

I don’t know about the southern states but here in Queensland summer has hit with a vengeance. We’re having 30°C (86°F) days most days even though it’s only mid Spring. So hot weather calls for nothing better than a nice ice-cream and it’s even more perfect when the dessert in question doesn’t derail your health and weight loss ambitions. I like it!

Cheese Chips

More people have asked me about savoury snack ideas as I do make a lot of sweet stuff – my personal preference. I seem to enjoy the sweeter stuff more in terms of feeling satisfied more quickly. I guess it’s because my version of sweet is real food, which is maybe why it hits the spot for me. Who knows?

All I do know is what my body likes and I can tell when I may have had too much sweet, it clearly gives the signal – time for some savoury/salty stuff now. So that’s why I love this Cheese Chips recipe!

Something so simple to make yet hits the sweet, savoury, satisfying rich taste that only peanuts can do, all at once.

And if it doesn’t have enough going for it already, I have found this base recipe to be so versatile. It can morph into other things such as a base for a slice, add dried fruit and nuts and they become bliss balls, cover in healthy chocolate and it turns into heaven. I’m sure there are many more adaptations to discover, so let’s get mixing.

How have you handled the caffeine in coffee throughout your life?

Can you have one a day and not worry about it? Or do you find you keep having more?

In my health and weight loss journey, while I have come a long way from the overweight days and have learned so much, the universe never ceases to amaze me further with new discoveries all the time.

Usually these revelations don’t come out of the blue but they build up over time.  If I don’t get the message in the early stages where the discomfort is minor, it gets to a major discomfort stage to get my attention. Think pain, hardship, embarrassment, whatever. It just gets worse until you do something about it.
