I’m excited again at the start of a new year, it does it to me every time. Not sure why, maybe it’s the holidays and so you are more relaxed and actually have time to think about your life and make plans. Or maybe it’s time to brush yourself off and start again.
I have a confession to make. This recipe for Cherry Chocolate Jelly Slice was supposed to be something entirely different. It was supposed to be ice-cream!
With cherry season here I had visions in my head of this deliciously creamy ice-cream with chunks of cherry and chocolate through it and a bit of a crunch of macadamia nuts – heavenly, dreamy and yum.
My mother used to make this healthy potato salad only at Christmas time and I loved it. I asked her one day why she didn’t make it at any other time but there was no reason, other than she forgot.
And I used to forget that I loved it too…but not anymore.
For the party season, here are some healthy party snacks. A more nutritious alternative to commercially made chips, and various other types of junk food that is usually served at a party.
I love this Chocolate Fudge because it is super easy, as is my preference. It was just a tweak on my Homemade Chocolate mix that made it completely different, rich, decadent and just all over Oh My Goodness!
I love it when I have cooking weeks where everything works! I had a few disasters not that long ago where the result was so bad that even I couldn’t eat it – very rare as I hate to waste food. But this week was truly stellar, so here is one of the recipes today and the rest will follow in the weeks to come.
One of my favourite and easiest things to make for dinner is Lemon Baked Salmon. I’ve yet to find any other flavour with salmon that I like as much – maybe you can let me know how you cook it, so I can expand my repertoire!
Let’s take a little diversion from sweet treat recipes this week because yes, while I find them fun to make and let’s face it – eat as well – the other 95% of the time I’m eating protein, fruit and healthy fats to keep everything ticking along in vibrant, healthy bliss.
I have been reading a few health books lately, specifically about grains and weight loss. The interesting thing is that they exactly mirror my beliefs on this subject and reveal at least five weight loss mistakes that people make.
My beliefs of course stem from my own experience but also of witnessing the plight of others who keep trying to do the ‘diet and exercise’ advice and fail spectacularly for years. Some never succeed and spend most of their lives miserable. (After dishing out hundreds of dollars on programs that can never work.)
Classic white chocolate snacks inspired by the White Chocolate Spiders recipe from years ago!
It was basically melt white chocolate, add peanut butter, tip in crunchy noodles and that was it! I used to love them and then feel sick afterwards from all the crappy stuff in it.
This Macadamia Biscuits recipe is a particular favourite of mine, as I created it years ago when I was just starting out on my health crusade. I was just starting to cook a few things again after hating cooking for so long. For me cooking meant putting on weight, so it was a hate/hate relationship for many years.
So I was perusing instagram as I like to read other people’s stories about how they live healthy lives or tackle weight loss and there was one profile that caught my eye for all the wrong reasons. Let’s call her Weight Watchers Wendy.
