Chocolate Fudge Super Rich

I love this Chocolate Fudge because it is super easy, as is my preference. It was just a tweak on my Homemade Chocolate mix that made it completely different, rich, decadent and just all over Oh My Goodness!

I love it when I have cooking weeks where everything works! I had a few disasters not that long ago where the result was so bad that even I couldn’t eat it – very rare as I hate to waste food. But this week was truly stellar, so here is one of the recipes today and the rest will follow in the weeks to come.

The end result must be kept in the freezer as the one ingredient I added – the solid part of the coconut cream – makes it more melty than usual. However the fact that you have to eat it out of the freezer instead of the fridge – a big who cares! It’s still like a burst of heaven.

So here is the recipe:-

Chocolate Fudge Super Rich

¼ cup coconut oil
1/4 cup cacao butter
1 TBS raw cacao powder
2 TBS honey
2 TBS Peanut Butter powder
½ cup solid part of coconut cream
pinch rock salt

Method

Put your can of coconut cream in the fridge the night before so it solidifies.

Melt cacao butter and coconut oil on very low heat or in a double boiler if you have a gas stove.

Take off heat and mix in the rest of the ingredients.

Pour into a paper lined tray.

Chill in freezer.

When solid, cut into squares and indulge when it takes your fancy.

It’s blissful bites like these that make healthy eating a pleasure and not some virtuous (painful) activity that you think you need to do for your own good. Indulge in the right things and enjoy your life!
