Everyone loves fruity muffins, but they’re even better for your health when they are Gluten Free Blueberry Muffins!
I was trying to think of other things to have for breakfast instead of eggs, fruit and Greek yogurt or the 5 other options in my Zen Beach Diet book. All are fabulous choices but sometimes you want something that still fits the Ray Peat Inspired eating model, but is a little different. The fact that it can be eaten with the amazing protein filled cottage cheese and zesty marmalade is just an added bonus.
While I mentioned in passing in a few social media posts that I was making a dessert recipes book, I prefer not to say much about it while I’m doing it, because you never know when the finish line is going to be.
I’m super excited now though to announce – IT’S HERE! Ta da!
Since I’ve discovered that heating nut flours like almond flour etc actually increases the oxidisation of PUFAs (poly unsaturated fatty acids) in them and kind of makes them toxic (eek!), you can understand why I’m not so keen to continue making up recipes with these nutty flours in it. These Potato Gluten Free Shortbread Cookies though have none of that and more of the good stuff.
This Protein Bar recipe was another accident as I am still on my quest to make a brownie type of treat without a truckload of dates in it. Everything still turns out yum, if not an interestingly different texture to what I envisaged. However once again it’s good enough to add to the recipe list and something I would make again.
