I just wanted to share with you my current favourite salad – the Lemon Noodle Salad. I could eat this at least four days in the week, as it’s just so light and tasty and really hits the spot. The best part is that it’s super easy (I don’t cook any other way) and is really adaptable to whatever you have in your fridge.
So there are only a couple of essential ingredients to make it taste similar to mine and these are:-
Lemon Noodle Salad
1 big handful of rocket
1 big handful of kelp noodles*
1/2 lemon juiced
Olive oil drizzle
Rock Salt/ Pepper
Method
So thoroughly wash and drain your rocket and assemble in a bowl.
Boil kelp noodles in salty water for about 5 mins.
Drain and melt some butter into the noodles. (Or just the olive oil is fine.)
Place noodles over rocket and liberally drizzle with olive oil, salt/pepper then squeeze a half a lemon over the top.
Optional Mix ins
So then you are ready for your favourite mix-ins which are totally optional and interchangeable to suit your taste:-
- mushrooms fried in butter
- fresh tomato
- small tin of tuna
- cooked prawns
- herbs like fresh coriander, flat leaf parsley, mint
- chilli
- strips of cooked beef, chicken or fish
- sprouts
- avocado
- lime instead of lemon
And anything else you like. The only things that don’t work with this flavour are starchy foods like wheat noodles, or potatoes.
*with the kelp noodles too, I eat them because they have no grain or carbs in them but you can totally use other clear noodles like rice noodles, sweet potato noodles or better still zucchini noodles to make it starch free.
The result is just this fresh, peppery, tangy delight.
Now that’s what I call a salad! No boring iceberg lettuce here.

2020 Update – now I don’t eat green leafy vegetables like rocket that much any more due to the anti nutrient content however cucumber strips would work here as well.
