Peppermint and chocolate is a fantastic combination. These Homemade Peppermint Patties are the only dish with peppermint that doesn’t taste like toothpaste to me.
I put together this recipe last year but have made a slight change, as I didn’t like the way the coconutty part was a bit crumbly. Macadamia nuts to the rescue as their oil content helps the ‘stick it’ factor and mild taste takes on the flavour of whatever you put with it.
Ta daah peppermint patties perfection.
I use Peppermint essential oil from the health shop. (Note: they say not to ingest this stuff just for the warning liability factor, I eat it with no adverse affects. So with all things, make your own decisions.)
Homemade Peppermint Patties
Base
1 cup shredded coconut
1 cup macadamia nuts
2 drops of peppermint oil
¼ cup coconut oil
1 TBS organic maple syrup
Whizz in food processor until all stuck together and press in lined tin.
Top (Homemade Chocolate recipe)
¼ cup coconut oil
1/4 cup cacao butter
1 TBS cacao powder
2 TBS organic maple syrup
2 TBS peanut butter powder
pinch of rock salt
2 drops of peppermint oil
Melt cacao butter and coconut oil on very low heat or in a double boiler if you have a gas stove. Take off heat and mix in the rest of the ingredients.
Pour over the top of the base and chill until set.
Cut into squares.
Enjoy your sweet treats knowing that you are doing the best for your body.
