This Protein Bar recipe was another accident as I am still on my quest to make a brownie type of treat without a truckload of dates in it. Everything still turns out yum, if not an interestingly different texture to what I envisaged. However once again it’s good enough to add to the recipe list and something I would make again.
After I made my Sesame Candy, I took it one step further and while melting the butter, I added the honey and made sure it bubbled up like it does when you are making the sesame snaps. I figured this would have a little bit of a candying effect to make the rest of the raw ingredients a little more chewy. And that it does.
Inspiration
So these recipes plus my peanut butter balls were all inspirations for this one. Still trying to get to my perfect brownie mind you. It didn’t work for what I wanted in that while taste testing, it starts off quite firm and crispy and the more you chew it, it finishes up chewy like a protein bar. Totally weird. But not bad weird, just different. See what you think.
Protein Bar Chewy Chocolate
2 TBS butter
2 TBS honey
2 TBS cocoa powder
¼ cup peanut butter powder
1 tsp vanilla extract
3 TBS 40UP – Collagen Protein Powder*
Method
In a saucepan on medium heat melt the butter and honey. Watch it carefully and allow it to bubble and simmer for about a minute. Add the peanut powder and vanilla extract stirring continuously until it is smooth and melty.
Take off the heat and add the cocoa powder. Then half of the protein powder – mix thoroughly with a spoon, then add the rest of the protein powder and ensure all powder is wet and blended.
Now at this point I pressed it into a lined tin. Next time I will actually make it into little shapes straight up as it is firm enough to do this.
The reason is that after it had been in the fridge overnight it was as hard as a rock, and I couldn’t cut it. Hence the image shows it broken into pieces.
I probably could have left it out of the fridge a bit and it might have softened a little, so I could cut it…but that requires patience…who me?
I’ve been adding quite a bit of protein powder in many of my treats lately and next week, I’ll tell you why.
