Peanut Butter Cheesecake Bites

One of my favourite things about simple recipes is that you can sometimes just add one more ingredient to the mix and it completely changes it to a new taste sensation. And this is what happened here for these Peanut Butter Chocolate Cheesecake Bites.

I had Philly cheese in the house for some reason and was making my PB Protein Balls and my usual weekly batch of Homemade Chocolate and decided to mix it in and the result was a decadent ‘to-die-for’ dessert that’s super healthy!

Now before I launch into the recipe, I just wanted to mention again my stance on dairy food as I have read lots of information on how it potentially can be inflammatory for the body. And indeed for the many peeps out there who are lactose intolerant, I hear you. However for me, despite all my other issues, dairy food isn’t one of them, so I incorporate a little of it into my diet – some greek yogurt, a little feta, cheddar and parmesan cheese, an occasional cream sauce however I definitely have a tolerance limit which is two cups of any kind of dairy per day.

We are all different, so just do what works for you. Onward to the delicious treat!

Peanut Butter Chocolate Cheesecake Bites

Now the execution of this recipe is a little fiddlier than I would like however, because I make my chocolate so often, and the PB balls are super easy as well, it didn’t seem so arduous.

Filling

1 TBS 40UP – Collagen Protein Powder*
2 TBS peanut butter powder
2 TBS honey
½ cup low fat Philly cream cheese (125 g)

Method Filling

In a bowl blend and press together until well combined.

Take about teaspoons full at a time and roll into balls.

Place on a tray and refrigerate while making the chocolate.

Chocolate coating (Homemade Chocolate Recipe)

¼ cup cacao butter (melted)
¼ cup coconut oil
2 TBS honey
1 TBS cocoa powder
2 TBS peanut butter powder

Method Choc Coating

Melt all ingredients in a double boiler on very low heat and mix well until smooth (do not boil.)

Stick a toothpick in the balls and dip them in the chocolate and place them in tiny cupcake papers. Refrigerate until set.

The taste is like the most amazing Peanut Butter chocolate cheesecake deliciousness!
