Lemon Bars Gluten Free
Tangy delicious and super easy to make. Using the two best saturated fats - macadamia nuts and coconut oil.

- 1 cup raw macadamia nuts
- 1 cup shredded coconut
- 3 TBS organic maple syrup
- 1 lemon zest and juice
- 1/4 cup coconut oil
- 1 tsp vanilla extract
Whizz nuts first in a food processor until forms a smooth paste.
Add rest of ingredients and keep whizzing until well combined.
Press into a paper lined tin, sprinkle top with a little shredded coconut.
Chill in fridge overnight and cut into squares before serving.
I originally called it Lemoni Slice as it has a nice ring and sounds Italian! But the search bots said no one looks for that. So a plain jane name it is!
Google doesn't like the fact that there is no cook time, so I had to put in 1 minute, even though we don't actually 'cook' anything!
