Continuing the theme of ‘lunchbox or travel snacks,’ another recipe evolved, and these Crunchy Raw Protein Cookies may be my current favourite!
It just astounds me how a raw cookie can be crunchy. Totally tastes like it’s cooked, only it’s not!
A friend had given me the dried blueberries to use, however you can use any dried fruit that’s in little pieces. Just try and find ones without ‘vegetable’ oil of dubious origin (unsaturated fat that messes with your cells and likely to be rancid due to exposure to air and light.) And also try and avoid preservative 220. (I don’t understand how prunes and dates can be dried and packed without this preservative, but it seems every other dried fruit needs to have it? )
The only ones I can find in supermarkets are goji berries that don’t have any of the crap in it and Verity Prunes (in the red packet.) But for anything else like sultanas, raisins etc. you have to go to specialised online stores. Even my local health shop had organic types but still had sunflower oil on it – I don’t want oil with my fruit please!
So let’s get melting and mixing…
Crunchy Raw Protein Cookies
½ cup cacao butter
½ cup coconut butter
½ cup shredded coconut
½ cup 40UP – Collagen Protein Powder*
¼ cup peanut butter powder
1 tsp vanilla extract
1 TBS raw honey
½ cup dried blueberries

How you do it…
Melt cacao butter and coconut butter in a double boiler over low heat. Stir a little as it’s melting.
Add vanilla extract and honey. Mix through.
Add coconut and blueberries. Mix through.
Add half the protein powder, mix – then add the other half and check out the texture. It should be all stuck together in a ball like cookie dough. If it’s not and it’s still quite sticky, then add the extra 1/8 cup protein powder (this is like a heaped TBS full.)
Spoon out teaspoons full onto paper lined tray. Flatten them a little and shape into circles.
Chill in the fridge for about an hour.
These are great for lunchboxes as they don’t melt at room temperature. They may soften a bit but they’re still crunchy – which still amazes me!
Now by all means make changes to suit what you have – if you’re peanut butter allergic then leave that out and add a little more protein powder. While I haven’t tried it, I don’t think real peanut butter will work in this because then you are adding a softer fat, which may affect the texture and/or will be too soft out of the fridge. Also it adds too much fat to the cookies & derails our pro metabolic eating plan.
The dried blueberries add a little sour tang to break it all up. They’re my new favourite!

2022 Update: since creating this recipe, my diet has changed to a more Dr Ray Peat fast metabolism style and so I don’t eat coconut butter much anymore but I’m sure it would still work without this ingredient. For more information and recipes on my new diet direction check out my books here.
