It’s no secret that I am a fan of Chocolate and Peanut Butter together and in the past I would easily eat packets of Reese’s Peanut Butter cups until I was sick. Ah such is the lure of junk food. I’m so glad those days are over.
So in it’s place I created a healthy version that allows me to have a normal relationship with this type of food. I still love them to bits and enjoy eating them but because they are nutrient rich, I eat one or two and my body signals scream at me “that’s enough” and I can’t eat any more. A far cry from the past binge eating days.
So most of my weekly batches of Homemade Chocolate are the kind where I make a batch of Peanut Butter balls as well and combine them together. So much rich chocolately goodness, and on the satisfaction scale – 150%!!
So I thought I would try a slice version of this to see what would happen and it was simply, deliciously ah-mazing!!!! There was this rich chewy texture to it that reminded me exactly of a snickers bar however I didn’t think snickers had peanut butter in it? Weird.
So it’s the fact that I can make and eat treats like these that enables me to eat the way I do – no PUFAs, no grain, etc. Who cares about bread when you can eat a healthy style snickers bar every day if you feel like it?
In the process I found the method just a teensy bit more fiddly than usual but it scrapes in with the Slim Birdy approval factor just because it tastes so damned good.
The taste testers gave it the 10/10 factor, so let’s delight your family and friends too!
The Recipe…
Peanut Butter Chocolate Slice
Base
2 heaped TBS peanut butter (or PB2 peanut butter powder with a little coconut oil)
2 heaped TBS 40UP – Collagen Protein Powder*
2 TBS honey
2 TBS melted coconut oil
Combine all ingredients and press together in a bowl until all dry ingredients are now wet. Add a little more coconut oil if the mixture is too stiff.
Press into a small tin lined with cooking paper so the base is covered with the mixture.
Middle
Handful of raisins
Handful of chopped macadamia nuts
Spread these over the base above and gently press a little into the base.
Top (Homemade Chocolate mix)
¼ cup coconut oil
¼ cup cacao butter
1 TBS cocoa powder
2 TBS organic maple syrup
1 TBS tahini (optional)
1 TBS peanut butter (or PB2 peanut butter powder)
pinch of pink Himalayan rock salt
Melt cacao butter and coconut oil on very low heat or in a double boiler if you have a gas stove. Take off heat and mix in the rest of the ingredients.
Then pour the mixture on top of the base.
Chill in the fridge overnight then cut into small squares (or big squares if you like!!!)

Kristy, you are amazing! The PB choc tweet slice is delicious! I didn’t have the protein powder or walnuts and raisins so I used almond meal and trail mix instead. So yummy! Xox
