Crunchy Raw Protein Cookies

It just astounds me how a raw cookie can be crunchy. Totally tastes like it’s cooked, only it’s not!

A friend had given me the dried blueberries to use, however you can use any dried fruit that’s in little pieces. Just try and find ones without ‘vegetable’ oil of dubious origin (unsaturated fat that messes with your cells and likely to be rancid due to exposure to air and light.) And also try and avoid preservative 220 and added sugar – it really doesn’t need it.

The only ones I can find in supermarkets are goji berries that don’t have any of the crap in it and Verity Prunes (in the red packet.) But for anything else like saltanas, raisins etc you have to go to specialised online stores. Even my local health shop had organic types but still had sunflower oil on it – I don’t want oil with my fruit please!

So let’s get melting and mixing…

Crunchy Raw Protein Cookies

½ cup cacao butter

½ cup coconut butter

½ cup shredded coconut

½ cup vanilla protein powder

¼ cup peanut butter powder

1 tsp vanilla extract

1 TBS raw honey

½ cup dried blueberries

extra 1/8 cup protein powder (if needed)

How you do it…

Melt cacao butter and coconut butter in a double boiler over low heat. Stir a little as it’s melting.

Add vanilla extract and honey. Mix through.

Add coconut and blueberries. Mix through.

Add half the protein powder, mix – then add the other half and check out the texture. It should be all stuck together in a ball like cookie dough. If it’s not and it’s still quite sticky, then add the extra 1/8 cup protein powder (this is like a heaped TBS full.)

Spoon out teaspoons full onto paper lined tray. Flatten them a little and shape into circles.

Chill in the fridge for about an hour.

These are great for lunchboxes as they don’t melt at room temperature. They may soften a bit but they’re still crunchy – which still amazes me!

Now by all means make changes to suit what you have – if you’re PB allergic then leave that out and add a little more protein powder. While I haven’t tried it, I don’t think real PB will work in this because then you are adding a softer fat, which may affect the texture and/or will be too soft out of the fridge. Try it if you like though and tell me if it works!

The dried blueberries add a little sour tang to break it all up. They’re my new favourite – I hope they’ll be yours too!
