Just thought I would keep away from chocolate this time around and play with some cute shapes in this high protein snack recipe – Lemon and Coconut Gummies.
Interestingly some body builders and natural therapists are steering away from protein powders and heading more towards the healing benefits of gelatin. It is highly anti-inflammatory and balances amino acids when eating too much muscle meat like chicken breast and steak.
I was playing around with my macros on Cronometer to see how I was balancing my protein, carbs and fats and noticed that I was a little high in fats. While the right fats are great for us, it doesn’t mean you can have unlimited amounts. So I just needed to balance it a bit and up the protein. And these delicious bites do the trick.
So on the recipe..
Lemon & Coconut Gummies
Juice of 2 lemons (approx 1/4 cup)
2 TBS raw honey
3 TBS grass fed gelatin (Peptipro Beef Gelatin)
Juice of 1 lemon
1 TBS raw honey
4 TBS coconut cream
2 TBS grass fed gelatin
(totally optional – 2 TBS Gelatin Hydrolysate – just to get extra gelatin in there. One in each batch. It doesn’t gel or affect the recipe in any way.)
Start with the lemon part and put the lemon and rice malt syrup in a pot over low heat, mix together then slowly sprinkle each TBS of gelatin over the top and thoroughly mix in after each spoonful.
Keep mixing until the mixture is thoroughly melted through. Pour into silicon moulds only filling each half way. Pop in the freezer to set quickly.
In the same pot, do the same thing over again with the coconut mixture and fill the silicon moulds the rest of the way.
Chill in the fridge.
These are tangy and creamy all at the same time, filling that sweet and protein gap without adding more fats to the mix. They don’t melt out of the fridge either, so they are great to pop in the school lunch box or take to work.
