This recipe was too yum not to post on here asap.
So I may have hit on something I like even better than raw cacao chocolate – if that’s even possible? I wondered what would happen if I just left out the cacao powder and coconut oil when I was making my chocolate tweets (‘cos the coconut oil and cacao can be kind of overpowering) and ramped up the butter and nut butter content.
Well, it’s kind of awesome.
And this easy recipe has a few extra bonuses to make it even more appealing. One is that it is all just melt and mix – no food processor required – less cleaning up! Yahoo! And the second best thing is that exact quantities don’t really matter, just shove it all in and it works – now that’s my kind of easy cooking!
Since making these at least 3 times now, another slight variation made them even more chewy which was even more amazing. I added 4 TBS of vanilla protein powder. At first I added more but that made it kind of crunchy like a biscuit, so definitely a bit less was better. (This time the quantity did matter! Ha ha.)
White Chocolate Nut Fudge
1/4 cup cacao butter
2 TBS butter
2 TBS Peanut Butter
2 TBS tahini
2 TBS rice malt syrup
Melt in a double boiler mixing as you go. First two ingredients first, then add the others after it’s melted, continuing to mix. Spoon into silicon moulds or cupcake papers. These are best kept in the freezer for extra chewiness.
A great keto dessert bite and if you are strictly Paleo and don’t peanut butter, then any other nut butter will be fine and still taste amazing!
