So the success of my sesame snaps sent me off onto other creative tangents as to what else I could toffee snap using the same method and nearly the same ingredients.
I think I mentioned my oats/raisins disaster – probably for the best as I don’t eat oats and was just trying it for my fiancé. He gave it the resounding thumbs down, so we stick to the original sesame for him.
However I thought my all time favourite macadamia nuts might do the trick as they are buttery and delicious, especially when roasted and I wasn’t disappointed. (Drool, drool.)
These crafty little nuts have a truckload of nutrients and I won’t bore you with the detail however they also have the best Omega 3 to 6 ratio, so lots of ticks here in my view. Plus super yum as a bonus.
Combine that with my Chocolate Tweet super rich chocolate and now we’re getting a bit crazy.
So enough ramble, let’s get into it…
Macadamia Choc Toffee
Nutty toffee part…
1 cup raw macadamia nuts
2 TBS real butter
4 TBS rice malt syrup
pinch Himalayan rock salt
How you do it…
Preheat oven to 200C (400F)
Chop nuts finely.
Melt butter & syrup in a pan over medium heat until simmering.
Add nuts and mix through.
Line tin with the correct baking paper** (disaster awaits if you get this wrong, see below)
Spoon out mixture around the tray, giving room to spread.
Check at 10 min mark to see that all is bubbling nicely.
Continue for another 2mins or so until golden brown.
Remove from oven and allow to cool completely.
Chocolate Tweet part..
¼ cup coconut oil
1 inch x 1 inch square of cacao butter
1 TBS raw cacao powder
2 TBS organic maple syrup
1 TBS tahini
1 TBS Peanut Butter
pinch of Himalayan rock salt
How you do it…
Melt cacao butter and coconut oil on very low heat or in a double boiler if you have a gas stove.
Take off heat and mix in the rest of the ingredients.
Then pour over the toffee part and chill in the fridge.
When set, break into pieces and drool as you eat them!
Store in the fridge – as the chocolate melts easily, take out only when serving or gobbling them down yourself.

Leave in the fridge to set.
